Meat N' Three Sliders

Tennessee is known for it's Meat N' Three , which are diners that focus on a type of meal similar to the blue plate special, elsewhere, and consist of a meat and 3 sides...and a roll or cornbread! Read more ! In my slider version, I chose meatloaf as the meat, and mashed taters, black eyed peas and greens as the three. Here's how I put them together! Week 5 Steelers-38 Titans-10
Ingredients:
1lb ground beef
2 eggs, divided, 1 beaten
1 cup fine bread crumbs, divided
1t dried minced or grated fresh onion
1t worcestershire sauce
about 2t tomato sauce(use ketchup if you'd like...i don't like
about 3-4 cups mashed potatoes(left over is fine, as long as they are fairly plain... nothing fancy, needed. heck, use the instant 100% tater flakes and whip up a quick batch, if you want
about 10oz fresh baby spinach, roughly torn
1 cup cooked black eyed peas(1can, drained)
2 cloves garlic, minced
3t bacon grease
hot sauce
heinz chili sauce
kosher or sea salt and fresh ground black pepper
12 soft, yeast dinner rolls, baked and sliced in half to make mini buns
Directions:
1. Combine ground beef, 1 egg, 1/2 cup bread crumbs, minced onion, Worcestershire sauce, tomato sauce and a lil salt and pepper, in a large bowl.
2. Mix gently, using hands, until combined. Do not over mix.
3. Form into several small loaves and bake at 350 for about 30 minutes, or until cooked through, but don't over do it. Cool.
4. Crumble cooled loaves and combine them with the mashed potatoes, another egg and the remaining 1/2 cup of bread crumbs.
5. Form mixture into 12 round patties, to fit the roll buns
6. Top them with chili sauce and bake at 350 for about 12-25 more minutes, until hot and starting to turn golden brown.
7. Meanwhile, heat bacon grease and garlic, spinach and drained black eyed peas. Heat through, tossing often, until hot and spinach has slightly wilted.
8. To serve, put a meatloaf/tater patty on the bottom of each roll, top with a bit of the spinach/black eyed pea mixture and add the top bun! :)
