Meat Loaf With Cheese Stuffing |

On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share Ingredients:
3 lbs ground beef |
3 cups fresh bread cubes |
1 cup onion, minced |
1/2 cup green pepper, minced |
4 eggs, slightly beaten |
3 tablespoons horseradish |
1 tablespoon salt |
2 tablespoons prepared mustard |
1/4 cup evaporated milk |
1/4 cup catsup |
2 (8 ounce) packages sharp cheese slices |
1 tablespoon parsley flakes |
Directions:
1. Combine beef, cubes, onions, green peppers, eggs,horseradish, salt, mustard, milk, and catsup. 2. Divide into 3 parts. 3. Pat 1 part into loaf pan. 4. Cover with 5 overlapping cheese slices. 5. Spread with second part of beef. 6. Cover with 6 overlapping cheese slices. 7. Add remaing beef mixrure. 8. Invert loaf onto jelly roll pan or foil covered cookie sheet. 9. Bake at 350* for 45 min. 10. Crumble 2 slices of cheese over meat loaf, bake for 5 min longer. 11. Cool for 15 min before serving. 12. Garnish with parsley 13. Slice to serve. |
