A flavorful meat loaf from the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
2 lbs ground beef |
1 lb ground pork |
1/4 cup minced onion |
1/2 cup prepared horseradish |
1 teaspoon prepared mustard |
2 eggs, well beaten |
1 teaspoon salt |
1/8 teaspoon pepper |
1/2 cup ketchup |
Directions:
1. Combine the first 8 ingredients; mix well. 2. Grease a metal ring mold well and pour ketchup in the bottom. 3. Fill mold with meat mixture and bake at 350F for an hour. 4. When finished, unmold and fill center with your vegetable of choice. |
