Meat Enchiladas

You will need to make a taco beef mixture to fill the enchiladas. You can find mine, your use your own seasoned meat.
Ingredients:
1/4 cup water
1 (8 ounce) can red enchilada sauce
1 (12 ounce) package corn tortillas
1 (8 ounce) package cheddar cheese
1 (8 ounce) package monterey jack cheese
Directions:
1. make your seasoned taco meat.
2. in small skillet, put water and small amount of enchilada sauce on medium-hi heat.
3. when warm, dip corn tortilla until soft (be careful not to go too long, they will fall apart easily).
4. put tortilla in 9x13 dish, fill it with meat and little bit of cheese.
5. roll up enchilada
6. repeat steps 3 & 4 to use all of the tortillas and fill up your dish.
7. pour remaining enchilada sauce over enchiladas and top with remaining cheese.
8. cook at 350 until cheese is melted.
9. serve with toppings (lettuce, sour cream, etc - ) if desired.
