Pretty good soup, I found a long time ago in a womans day cookbook. Enjoy. Doubles easily. Ingredients:
1 lb ground beef |
1 garlic clove, minced |
2 sprigs parsley, chopped |
1/4 teaspoon marjoram |
1/4 teaspoon dried basil |
1/4 teaspoon onion salt |
1 1/2 teaspoons salt |
1 dash pepper |
1 egg |
flour |
2 beef bouillon cubes |
4 cups water |
1 (15 ounce) can tomatoes |
1 bay leaf, dried and crumbled |
4 tablespoons uncooked rice |
Directions:
1. Mix first 6 ingredients, 1/2 tsp salt, pepper and 1 egg. Shape into 32 tiny balls; dredge with flour. 2. Bring bouillon cubes, water, tomatoes, 1 tsp salt and bay leaf to boil in a dutch oven. 3. Add meatballs and rice, cover and simmer 45 minutes. 4. Serve immediately. 5. *You can also use beef broth instead of the bouillon cubs. You would need 4 cups of it. |
