Meat and Potatoes, Boer Style |

This is similar to Bobotie served in Africa. Ingredients:
8 ounces ground beef, cooked |
4 ounces onions, chopped |
1 teaspoon curry powder |
2 apricots, peeled, chopped, pitted |
2 slices bread, crumbs |
1/2 cup evaporated skim milk |
salt |
pepper |
1/2 cup tomato puree |
1 (1 ounce) packet instant beef bouillon |
1 teaspoon fresh parsley, chopped |
Directions:
1. Place beef in mixing bowl, lightly brown onions in a nonstick pan. 2. Add to beef the curry powder, apricots, tomato, bread crumbs and milk. 3. Mix well. Season to taste. 4. Shape into a loaf, place bay leaf on top and wrap with aluminum foil. 5. Bake at 375 degrees until firm. 6. Heat tomato puree; add broth mix. 7. Divide loaf equally and serve half of sauce over each portion. 8. Sprinkle with parsley. |
