Meat and Potato Hash With Dumplings (Beef) |

I got this from Saturday Cooks. I haven't made it yet, but storing it here for safe keeping. Great for budget cooking too. Ingredients:
500 g minced beef |
half a swede, peeled and cubed |
800 g potatoes, peeled and cubed |
4 carrots, peeled and sliced |
1 onion, chopped |
2 oxo cubes made up to 1/2 pt beef stock |
100 g self raising flour |
50 g suet |
Directions:
1. Par boil potato and swede. 2. Brown minced beef, carrot and onion for 5 minutes in a large pot. 3. Drain potato and swede and add to minced beef pot. 4. Add beef stock. 5. Bring to boil, season and simmer for 20 minutes. 6. Make dumplings by mixing flour and suet with a little cold water until they hold together but are not sticky. Make into tablespoon size balls and add to pot. They should float. 7. Simmer for about 30 minutes or until dumplings are ready. Add more water if it starts to dry out. |
