Harira, not very authentic. Bouillon used: 2 block Knorr Saveur Mouton. 1 tsp. of galangal pieces also used, could be substituted with cardomom, coriander, more ginger, or anything suitable. Actual saffron: 3 threads. Ingredients:
1 oz. bouillon |
1/2 cup chickpeas, dried |
1/2 cup lentils, dried |
4 onions, medium |
6 stalks celery |
6 cloves garlic |
6 oz. tomato paste |
15 oz. tomato sauce |
1 tsp. black pepper, freshly ground |
1 tsp. granulated garlic |
1 tsp. ground cumin |
1 tsp. ground turmeric |
1 tsp. ground cinnamon |
1 tsp. cayenne pepper (flakes) |
1/2 tsp. ground ginger |
1/4 tsp. ground cloves |
1 oz. saffron |
1 tbsp. apple cider vinegar |
2 tbsp. lemon juice |
Directions:
1. Set bouillon to melt in crockpot or other vessel with small amount of water. 2. Put in tomato paste and sauce, adding water to dilute. 3. Put in legumes. 4. Chop vegetables and add to crockpot, with sufficient water to allow cooking. 5. Add dried spices. 6. Cook all day or overnight. 7. Before serving, add vinegar and lemon juice. Serve with parsley and/or cilantro, and some cinnamon and black pepper to taste. |
