Meara's Marvelous Meat Loaf |

My daughter and I came up with this meat loaf. It is a kind of a combo of several different recipes with our own special twists ... it calls for oats instead of saltines or bread and we used 95% lean ground beef. Next time we are going to double the sauce and serve it on the side. YUM! Ingredients:
2 lbs lean ground beef |
2/3 cup oatmeal |
3 eggs |
1/3 cup onion, finely chopped |
1 (10 1/2 ounce) can french onion soup |
1 teaspoon parsley |
1 teaspoon thyme |
1 teaspoon sage |
1/2 teaspoon ground pepper |
1/3 cup ketchup |
3 tablespoons brown sugar |
1 teaspoon dry mustard |
1 teaspoon a- 1 steak sauce |
1 teaspoon worcestershire sauce |
Directions:
1. Mix all the meat loaf ingredients together in a large bowl. 2. Place meat mixture in a 5 x 9 loaf pan. 3. Bake in a 325 F oven for 75 minutes. 4. Meanwhile, combine sauce ingredients and mix well. 5. Remove loaf from oven and turn it out into a larger, oven-proof dish. 6. Make several cuts in the loaf (but do not cut all the way through.). 7. Using a spatula or brush, spread sauce over the scored meat loaf. 8. Return sauce-covered loaf to the oven and bake for an additional 30 minutes. |
