Mean Chef's Raspberry Mazurkas |

I adopted this recipe after its original poster, Mean Chef (IHHDRO), departed the site. Ingredients:
4 cups all-purpose flour |
2 cups brown sugar |
2 cups rolled oats |
3/4 cup walnuts, ground |
1 1/3 cups coconut |
3/4 teaspoon salt |
13 1/2 ounces butter |
1 3/4 lbs raspberry jam |
Directions:
1. Preheat oven to 350°F. 2. Melt butter and cool. 3. Combine all dry ingredients in mixer with paddle. 4. Add melted butter until well combined. 5. Press half of the mixture in a half sheet pan and roll to firm. 6. Spread with jam to within 1/2-inch of edges. 7. Spread remaining mixture evenly on top and press down lightly. 8. Bake until golden brown. |
