Ingredients:
4 tablespoons butter |
1 cup onion, finely chopped |
2 medium tomatoes, chopped |
2 cups frozen corn, thawed |
2 (14 ounce) cans creamed corn |
1 (12 ounce) can fat-free evaporated milk |
3 cups chicken broth |
1/2-1 teaspoon salt |
1 teaspoon black pepper |
Directions:
1. In a large saucepan, melt the butter over moderate heat. 2. Add the onions and sauté for 5 minutes. 3. Stir in the tomatoes and cook for about 5 more minutes. 4. Add the corn, creamed corn milk, chicken broth, salt, and pepper. Simmer for about 15 minutes. 5. Serve with crackers. |
