Ingredients:
14 ounces sweet creamed corn |
14 ounces whole kernel corn |
3 large tomatoes, chopped |
5 large eggs |
1 teaspoon vanilla extract |
3 tablespoons brown sugar |
1/2 cup milk |
1/3 cup cake flour |
1 tablespoon baking powder |
1 dash salt |
1 dash pepper |
1 dash cinnamon |
1 dash nutmeg |
2 cups cheddar cheese, grated |
Directions:
1. Mix the corn and the tomatoes. 2. In a separate bowl, mix the eggs, vanilla, sugar and milk. Add corn tomato mixture, the dry ingredients & the cheese, reserving some cheese for the top. 3. Pour into a buttered 2 quart dish & bake in a preheated 350ºF oven for 75 minutes or until set. 4. Serve warm or cold. |
