Meal - Sized Vegan Caesar Salad |

Most Caesars contain anchovy paste, not to mention a ton of fat and calories. I've eliminated the croutons since I hate them (with a passion), and cut the serving size down since I'm a major volume-eater. Enjoy! Ingredients:
5 oz light silken tofu (mori-nu, etc) |
1/4 tsp. maple syrup (optional) |
2 tbs. nutritional yeast |
1 tbs. fresh lemon juice |
1/2 tsp lemon zest |
1 tbs. apple cider vinegar |
1 tbsp. dijon mustard |
3 cloves garlic, minced |
1 tsp. coarse-ground black pepper |
1/2 tsp kosher salt |
1 large head romaine lettuce, washed, dried and chopped |
Directions:
1. Place tofu, syrup, nutritional yeast, lemon juice, lemon zest, vinegar, mustard, and garlic in blender or food processor, and process. Season generously with pepper and salt. 2. To assemble salad, place lettuce in salad bowl, and pour dressing overtop. Toss well to coat leaves evenly. |
