A lot lower in fat than traditional alfredo, but fat-free half and half keeps the creamyness. If you prefer the traditional alfredo, try this with a tablespoon of cream cheese added in with the cheese. Ingredients:
2 tbsp butter |
1 tbsp flour |
1 cup skim milk (fat-free half and half) |
4 ounces parmesan cheese (asagio, romano, or blend) |
1/2 cup chicken broth |
1/4 tsp garlic powder |
1/4 tsp cayenne pepper |
Directions:
1. Melt butter in a saucepan. Add flour and make a roux. 2. Add milk or half and half and cheese(s). Stir over low heat until cheese is completely melted. 3. Add chicken broth (low-sodium) until desired consistency and volume is reached. Stir in spices. 4. Serve over hot pasta. 5. *great with chicken or stuffed shells |
