Tuna, crumbled bacon, diced ham or chopped olives can be added to this basic, versatile recipe. Ingredients:
2 hard-boiled eggs, chopped |
1 celery rib, chopped |
1/3 cup small curd cottage cheese |
1/4 cup shredded cheddar cheese |
1 -1 1/2 teaspoon spicy brown mustard |
1/4 teaspoon salt |
1/8 teaspoon pepper |
4 slices whole wheat bread |
lettuce leaf |
Directions:
1. In a bowl, combine the first seven ingredients. 2. Spread on 2 slices of bread. 3. Top with lettuce and remaining bread. |
