Makes a great dip for shrimp or use on sandwiches, especially good with sliced tomato and egg sandwiches. Ingredients:
1 quart mayonnaise |
1 cup finely chopped spinach |
1/2 cup chopped scallion |
1/2 cup chopped cilantro |
1 serano chile, seeded and minced |
2 tablespoons chopped fresh tarragon |
2 tablespoons snipped chives |
2 tablespoons lime juice |
1 tablespoon lime zest |
1/4 teaspoon kosher salt |
black pepper, to taste |
1 dash hot sauce |
Directions:
1. Mix all ingredients in a medium bowl. Taste and adjust seasonings, adding more lime juice, salt, pepper, and hot sauce if desired. Chill for at least 2 hours to allow flavors to mingle. |
