MAUI PINEAPPLE LEMON GELATIN SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor Estate in Grapevine, Texas in 1996. Ingredients:
6 ounce package lemon gelatin |
20 ounce can crushed pineapple well drained reserving liquid |
2/3 cup whipped heavy cream |
1/3 cup mayonnaise |
1 cup loosely packed shredded cheddar cheese |
Directions:
1. Place gelatin in a large bowl. 2. In two cup measuring cup add 1/2 cup pineapple juice and 1 cup water. 3. Heat to very hot then add heated mixture to gelatin and stir until gelatin is dissolved. 4. Add 1-1/2 cups ice water and stir in well drained pineapple. 5. Pour gelatin mixture into rectangular glass container lightly sprayed with cooking spray. 6. Place in refrigerator until firm. 7. Mix whipped cream with mayonnaise and blend well. 8. Just before serving spread cream mixture over gelatin and sprinkle with cheese. Refrigerate until served. |
