From Mom's cookbook. For Passover and year-round. Use chicken fat (schmaltz) if serving with meat, margarine if serving with dairy. Ingredients:
10 eggs, lightly beaten |
2 tablespoons cinnamon |
1/2 cup sugar |
2 tablespoons vanilla extract |
2 apples, peeled cored and grated |
1 apple, peeled cored and diced |
1/2 cup raisins |
18 sheets matzos |
2 tablespoons margarine or 2 tablespoons rendered chicken fat |
Directions:
1. Combine eggs, cinnamon, sugar and vanilla in a large bowl. Add apples and raisins. 2. Hold each sheet of matzo under running water until it gets soggy and soft. Break into pieces 1-2 square and drop into bowl. Mix gently but thoroughly. Pour into 13x9x2 baking dish. Dot top with margarine or chicken fat. 3. Bake in preheated 350°F oven 50-60 minutes. Serve hot or cold. |
