A hearty, 100% veggie filling for tacos, burritos, and other Mexican favorites. Ingredients:
1 tablespoon cooking oil |
1/2 medium onion, sliced |
2 garlic cloves, chopped |
1 large zucchini, cubed |
1 (15 ounce) can pinto beans, drained |
1 (15 ounce) can black beans, drained |
1 (15 ounce) can hominy, drained |
1 (4 ounce) can chopped green chilies |
1/4 cup fresh cilantro, chopped |
2 teaspoons chili powder |
1/2 teaspoon ground cumin |
salsa verde, diced tomato, and cilantro for garnish |
Directions:
1. In a large frying pan warm oil of medium heat. Add onion, garlic, zucchini, Chili powder, cumin, and pinch of salt. Cook until onion sweats. Add beans, hominy, green chillies, and cilantro and cook over medium heat until warm. |
