healthy macaroni and cheese using whole wheat pasta and cauliflower for cheese sauce. from cookbook the sneaky chef Ingredients:
1/2 pound macaroni (whole wheat) |
2 cups of cauliflower (pureed) |
1 1/2 cups milk (2%) |
1/2 teaspoon salt |
2 large eggs |
2 cups low-fat cheese |
108 g cheddar cheese |
Directions:
1. cook the macaroni according to package directions (leave slightly undercooked), and drain. 2. cook cauliflower until very tender then puree in food processer until smooth. 3. whisk the milk, pureed cauliflower, salt, and eggs until blended 4. put half the cooked macaroni in a 8 by11 baking pan and top with half of the cheese. 5. Next, layer with the rest of the macaroni, and pour the milk mixture on top, 6. finishing with the rest of the cheese on top. |
