I made this up on the fly, so the amounts are approximate. Ingredients:
2 lbs yams |
1 avocado |
1/3 cup nonfat yogurt |
1/4 cup pistachios, crushed |
Directions:
1. Bake yams at 350 for 40-60 minute until soft. Let cool. 2. Scrape cooled yams into bowl; mash. 3. Add yogurt; whip. 4. Quickly chop and blend in avocado. 5. Move mixture to casserole. 6. Top with crushed pistachios. 7. Bake at 350 for about 20 minute. |
