Mashed Sweet Potatoes With Pistachios |

This dish can be made in 15-20 minutes. I invented it for a vegan-friendly, no-wheat, no-soy dinner. It could use more flavor, IMO, but I like it. Ingredients:
1 medium sweet potato |
1/4 c. crushed pistachios |
1 clove garlic, minced |
1 tbsp. olive oil |
salt & pepper to taste |
Directions:
1. Dice sweet potato & boil. 2. Drain water. 3. Mash all ingredients in a mixing bowl. 4. Taste as you go! |
