Mashed Sweet Potatoes With Horseradish |

I don't like sweet potatoes normally, but my dad made these when I went back home and they are excellent! He got the recipe from the Ann Arbor News, originally adapted from Fork in the Road, by Eric Villegas Ingredients:
3 lbs. large sweet potatoes |
1/4 cup unsalted sweet butter |
1 tsp. sea salt |
2 tbsp. maple syrup |
2 tbsp. horseradish (prepared in vinegar) |
Directions:
1. Preheat oven to 400 degrees, place sweet potatoes on baking sheet and roast until easily pierced with a fork, about 1 hour 2. Peel sweet potatoes while still hot 3. Combine potatoes, butter, salt, horseradish, and syrup in a bowl 4. Mash until smooth 5. Serve immediatly |
