Mashed Sweet Potatoes With A Pecan Crust |

I'm not one for sweets on my veggies so when a friend gave me this recipe, I was hesitant to try it but I did....And I love it Ingredients:
3 1/2 cups cooked sweet potato, about 2 medium potatoes.(i roast them but they can be boiled or baked) |
1 large can sweet potatoes, drained |
4 egg whites |
2 tbls. flour |
pecan crust |
1/3 cup brown sugar, firmly packed |
2 tbls. butter |
1/3-1/2 cup chopped pecans |
Directions:
1. Preheat oven to 350 2. Spray 9 in. pie plate with cooking spray 3. Beat potatoes, egg whites, and flour with hand mixer until smooth. 4. Put into pie plate 5. Bake for 15 minutes 6. Put brown sugar and butter in small microwaveable bowl 7. Heat on high power for about 20 seconds, or until melted 8. Remove potatoes from oven 9. Sprinkle pecans over potatoes 10. Drizzle sugar mixture over pecans 11. Return to oven and bake 15 minutes more |
