Need a swift side dish? Try these spiced sweet potatoes from out Test Kitchen. They're quick to cook and easy to mash in a food processor. Ingredients:
3 medium sweet potatoes (2 pounds), peeled and quartered |
1-1/2 cups water |
1/4 cup butter, cubed |
3 tablespoons honey |
1/2 teaspoon salt |
1/4 teaspoon ground nutmeg |
1/4 teaspoon ground cinnamon |
1/8 teaspoon pepper |
Directions:
1. Place sweet potatoes on rack in a 6-qt. pressure cooker; add water. Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium-high and cook for 8 minutes. (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.) 2. Remove from the heat; allow pressure to drop on it's own. Drain. transfer sweet potatoes to a food processor. Add the butter, honey, salt, nutmeg, cinnamon and pepper; cover and process until smooth. Yield: 4-6 servings. |
