Sweet potatoes are often overlooked in the daily diet, unless it's the holiday season of course! They are packed with beta carotene and vitamin A. To get the full benefits from beta carotene, you must eat sweet potatoes with some healthy fat. Ingredients:
2 large sweet potatoes, washed, peeled (optional) & cubed. |
1/2 tsp. cinnamon |
1/4 tsp. cloves |
2 tbsp. organic no-salt butter |
2 tbsp. agave nectar |
Directions:
1. Boil sweet potatoes iin water until soft; drain 2. Add cinnamon, cloves, butter and agave; mash thoroughly and serve. |
