We all make mashed sweet potatoes but this recipe is more about method.Eliminating the water gives the ultimate mash and more intense sweet potato flavor. These were done by friends last week and they are delicious. Ingredients:
4 tb unsalted butter,cut in 4 pieces |
2 tb heavy cream |
1/2 tsp salt |
1 tsp sugar |
2 lbs sweet potatoes,(2 lg or 3 med),peeled,quartered lengthwise,cut crosswise into 1/4 thick slices |
pinch of black pepper |
Directions:
1. 1. Combine butter,creamsalt,sugar and sweet potatoes in 3 or 4 qt. sauce pan.Cover,cook over low,stirring occasionally until potatoes fall apart when pked with fork,35 to 40 mins. 2. 2.Off heat,mash potatoes with masher in sauce pan. Stir in pepper,serve immediately 3. For mashed sweet potatoes with ginger and brown sugar,rplace sugar with 1-1/2 TB light or dark brown sugar,add 2 tsp minced or grated fresh ginger along with potatoes when cooking in step 1. |
