This is a great recipe to replace mashed potatoes. If you are counting your carbs it is a great alternative.
Ingredients:
1 (1 1/2 lb) rutabagas
1/3 cup sour cream
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 cup butter
1/8 teaspoon pepper
Directions:
1. 1. Peel rutabega with vegetable peeler and cut into small cubes, about 1/2 or smaller.
2. 2. Boil rutabega cubes for approximately 15-20 minutes. The time may vary based on size of pieces. They are done when easily poked with a fork.
3. 3. Drain rutabega and mash with potato masher with all other ingredients. A food processor works great if you have one.
