Very creamy and easy dish...I leave the skins on and use a hand masher to have a chunkier texture ..microwaving the potatoes helps free stove for other things...prep time is total time for dish Ingredients:
5 large red potatoes |
1/4 cup butter |
2 ounces cream cheese |
2 tablespoons sour cream |
1/2 cup milk (more or less depending on texture wanted) |
1/2 teaspoon dried dill weed |
salt and pepper |
Directions:
1. place scrubbed potatoes wrapped loosly in damp paper towel in the microwave - cook for 3-4 minutes at a time until done .approx 12 mins total - they are done when a butter knife slides through them easily. 2. while potatoes are cooking place butter in a mixing bowl. 3. when potatoes are done place on top of butter in bowl and chop coarsly using 2 butter knives in a criss cross pattern. 4. add cream cheese, sour cream , dill, salt and pepper to bowl and mash - add milk in while mashing until desired texture is reached. |
