Mashed Pumpkin and Bean Pots |

From an Edgell advertisement Ingredients:
500 g pumpkin, peeled and chopped |
300 g butter beans, drained |
3 tablespoons cream |
1 egg, beaten |
1/2 cup fresh breadcrumb |
2 teaspoons butter |
maple syrup or honey, to drizzle |
Directions:
1. Cook pumpkin in boiling water till tender. 2. Mash pumpkin and drained beans together. 3. Stir in cream and season with salt and pepper. 4. Spoon into 4 x 1 cup moulds. 5. Sprinkle with breadcrumbs, dot with butter. 6. Bake 200 C for 25 minutes. 7. Drizzle with maple syrup and serve. |
