Mashed Potatoes With Sauerkraut And Bacon

this is an easy, tangy side dish. From Betsy Esley who says it even better the next day.
Ingredients:
2 2/3 c water.
2/3 c milk
1/4 c cubed butter
1 t salt
2 2/3 c mashed potato flakes
1/2 c sauerkraut, rinsed, drained and squeezed.
1/3 c chopped onion
4 bacon strips cooked and crumbled
Directions:
1. in large saucepan, mix water, milk, butter and salt. bring to boil
2. Stir in potatoe flakes. Cover , remove from heat. Let sit 5 min.
3. meanwhile, spray small skillet with Pam, saute onion till tender.
4. Stie saurkraut into potatoes. Sprinkle with the onion and bacon.
