Mashed Potatoes With Sauerkraut And Bacon |

this is an easy, tangy side dish. From Betsy Esley who says it even better the next day. Ingredients:
2 2/3 c water. |
2/3 c milk |
1/4 c cubed butter |
1 t salt |
2 2/3 c mashed potato flakes |
1/2 c sauerkraut, rinsed, drained and squeezed. |
1/3 c chopped onion |
4 bacon strips cooked and crumbled |
Directions:
1. in large saucepan, mix water, milk, butter and salt. bring to boil 2. Stir in potatoe flakes. Cover , remove from heat. Let sit 5 min. 3. meanwhile, spray small skillet with Pam, saute onion till tender. 4. Stie saurkraut into potatoes. Sprinkle with the onion and bacon. |
