Mashed Potatoes With Crab Mariniere |

I found this recipe in one of my Southern Living Annual Cookbooks. Ingredients:
12 medium sized potatoes (new, peeled and quartered, about 2 1/2 lbs) |
1/4 cup sour cream |
1 cup butter, divided |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 bunch green onion, diced |
3 tablespoons flour |
2 cups milk |
1/2 teaspoon salt |
1/4 teaspoon ground red pepper |
1/3 cup dry white wine |
1 egg yolk, beaten |
1 lb fresh lump crabmeat, drained |
Directions:
1. Cook potatos in large pot of boiling water, enough to cover them; cook 20 minutes till tender;drain. Beat potato at medium speed with electric mixer till smooth. Stir in sour cream, 1/2 cup butter, 1/2 tsp salt,, pepper and if desired truffles. keep warm. 2. Melt remaining 1/2 cup butter in pan over med-high heat; add green onions. Saute 2 minutes till tender. Stir in flour, cook, stirring constantly, 5 minutes. gradually add milk. Stir in 1/2 tsp salt, red pepper, and wine. Reduce heat, and cook, stirring constantly, 10 minutes till thick. Stir 1 cup hot mixture into beaten egg yolk, stir in remaining hot mixture. Cook, stirring often for 5 minutes. Add crabmeat, toss gently. |
