Mashed Potatoes With Chipotle |

Hot Potatoes!! Not exactly good for the diets, but good for the taste buds. Ingredients:
2 lbs potatoes, peeled and cubed |
1 teaspoon ground black pepper |
1 tablespoon salt |
2 tablespoons softened butter |
2 chipotle peppers in adobe sauce,minced |
2 cloves garlic, minced |
1/2 cup shredded cheddar cheese |
1/4 cup mayonnaise |
1/4 cup heavy cream |
1/4 cup fresh cilantro |
Directions:
1. Cook potatoes in salted water about 20 minutes, until tender 2. Drain and allow to steam dry for about two minutes 3. Return potatoes to the pot and mash with pepper, salt, butter, chipotle peppers, and garlic until smooth 4. Fold in the cheese, mayonnaise, heavy cream, and cilantro until the cheese has melted |
