Mashed Potatoes With Celery Root |

This side dish is easy and impressive. Ingredients:
3 lbs new potatoes (about 8) |
1 lb celery root (about 2) |
3 garlic cloves, minced |
1/2 cup butter |
1/4 cup milk |
1/4 cup parmesan cheese, grated |
1 teaspoon salt |
1/4 teaspoon black pepper |
1/4 teaspoon paprika |
Directions:
1. Peel potatoes and celery roots. cut into 1/2 inch cubes and place in a large pot. 2. Cook potatoes and roots in boiling water (enough to cover) about 20 minutes or until tender. 3. Drain and place in a large bowl. Add remaining ingredients and mash with a masher until smooth. |
