A delicious spin on mashed potatoes. So creamy with a little burst of flavor! Goes well the Pollo Avellino sauce as a gravy! Ingredients:
2 pounds russet potatoes peeled and cubed |
1 tsp salt |
1/4 cup low-fat milk |
3/4 cup buttermilk |
2 tsp finely chopped dill |
1 tsp thinly sliced chives |
freshly ground black pepper |
Directions:
1. In a large saucepan, combine the potatoes, 1 tsp salt, and enough cold water to cover. 2. Bring to a boil over high heat 3. lower the heat to maintain a simmer and cook until fork tender, about 10 minutes 4. Drain the potatoes and return to the pan 5. Mash the potatoes and stir in the milk and buttermilk and dill 6. Season with salt and pepper to taste and serve |
