The essence of bay adds interest to plain mashed potatoes. Ingredients:
2 pounds baking potatoes, peeled and cut into 3/4-inch pieces |
2 cups water |
2 bay leaves |
1/4 cup butter or margarine |
1/4 cup milk |
1/2 teaspoon salt |
Directions:
1. Combine first 3 ingredients in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 15 to 20 minutes or until potato is tender. Remove and discard bay leaves. Drain potato, reserving 1/4 cup cooking liquid. 2. Combine potato, reserved liquid, butter, milk, and salt in a medium bowl. Beat at medium speed of an electric mixer until fluffy. |
