Mashed potatoes that can be made ahead frozen and reheated......believe me this are an awesome side for ham, turkey etc. Ingredients:
5 lbs of potatoes (less if your serving less) |
1 - 8 oz tub of cream cheese |
1 cups sour cream |
5 cloves garlic |
parsley (fresh or dried) - fresh is better |
pepper |
Directions:
1. Peel potatoes and boil potatoes with approximately 5 cloves of garlic. 2. Drain water when boiled and mash with a potato masher. 3. Mix in cream cheese, sour cream and fresh parsley & freshly ground pepper. 4. Grease a rectangular pyrex dish and added potatoes to dish. 5. You can freeze these potatoes for use at another function (just make sure you thaw before reheating at a 350 degree oven) or reheat just before your ready to serve..... 6. Another option is to add drained diced green chilies to this when your mixing in sour cream/cream cheese mixture.......this will add an additonal little zip. 7. WARNING : These are so not low fat! - Enjoy. |
