Easy way to dress up mashed potatoes, The flecks of green in the potatoes add color to a sometimes plain looking meal staple. Ingredients:
2 pounds potatoes (russets are best) |
1/2 cup whipping cream |
1/2 stick butter |
1 bunch green onions |
salt, to taste |
pepper, to taste |
Directions:
1. Peel potatoes and cut into 1 inch pieces. 2. Cook on top of stove in boiling water until they are very tender, about 15 minutes. 3. While potatoes cook, put butter and cream in a pan and heat to a simmer over medium heat. Stir often to prevent sticking or scorching. 4. Wash and chop the green onions, white and green parts both. 5. Mix green onions into the liquid mixture. 6. When potatoes are finished cooking, drain them completely and then return the to the same (warm) pan they cooked in. Mash. 7. Add the liquid mixture and stir to blend. 8. Add salt and pepper to taste. 9. Serve hot. |
