I must say, I thought I had mashed potatoes down and didn't need a recipe. This recipe changed my mind. I added ingredients I wouldn't have considered, Recipe courtesy of Family Circle All-Time Favorite Recipes. Ingredients:
5 lbs baking potatoes (about 10 large) |
2 teaspoons salt |
1 1/2 cups half-and-half or 1 1/2 cups milk |
6 tablespoons butter |
1/4 teaspoon black pepper |
1/4 teaspoon ground nutmeg |
1/2 cup fresh parsley, chopped |
Directions:
1. Peel potatoes. 2. Cut into 1 1/2 inch chunks, dropping into a large saucepan half filled with cold water. 3. Add 1/2 teaspoon salt. 4. Bring to boiling and boil, partially covered, until potatoes are tender, 15 minutes. 5. Drain and set potatoes aside. 6. In same saucepan, bring 1 cup milk and butter to simmering. 7. Turn off heat. 8. Return potatoes to pan. 9. Add pepper, nutmeg, and remaining 1 1/2 teaspoons salt. Mash. 10. Stir in parsley and remaining 1/2 cup milk. |
