This is for Amanda: she loves my mashed potatoes but can't make anything without a recipe! Ingredients:
6 medium potatoes, peeled and cubed |
3/4 cup milk or 3/4 cup cream |
1/2 cup butter |
salt |
pepper |
Directions:
1. Boil potatoes in 3 c water in medium pan until soft, nearly mushy. 2. Drain in colander. 3. Put potatoes and remaining ingredients in a large bowl. 4. Using electric mixer, beat on high until fluffy and smooth. 5. Beat longer about 3 minutes after you stop seeing lumps to make them light and fluffy. 6. Add more salt to taste. |
