This is a nice spin on mashed potatoes Ingredients:
6 slices bacon |
2 pounds small yukon potatoes, halved |
1 cup buttermilk |
1/4 cup chopped fresh chives |
1/2 cup shredded sharp cheddar cheese |
1/2 tsp. salt |
1/4 tsp. black pepper |
Directions:
1. Preheat oven to 350 degrees 2. Arrange the bacon on a sheet pan and bake fo 12 to 15 minutes or until crisp. Cool and chop. 3. Put the potatoes in a medium saucepan and cover with cold water. Bring the water to a boil and season with salt. Cook until tender. Drain and mash potatoes with butermilk and pepper. 4. Stir in the chives and cheddar cheese. 5. Fold in bacon, |
