A new spin on an old classic, low fat and delicious too! Ingredients:
5 medium yukon gold potatoes, scrubbed, cubed and well-cooked |
5 medium red potatoes, scrubbed, cubed and well-cooked |
2/3 cup plain, low-fat yogurt |
1/3 cup low-fat mayonnaise |
1 tbsp mustard |
3 tbsp relish |
1 medium red onion, diced |
1 stalk celery, diced |
1/4 tsp red pepper flakes |
salt and pepper to taste |
Directions:
1. Mash potatoes to your preferred texture (for very smooth potatoes use a ricer or food mill). 2. Beat in yogurt, mayonnaise, mustard and relish. 3. Fold in onion, celery, and pepper flakes, as well as salt and pepper if desired. 4. Serve cold. |
