My daughter taught me how to make this great dish. I had to figure out the measurements for this site. I always cook extra mashed potatoes so I will have enough left over to make this recipe. You can also use fresh mashed potatoes. When I use fresh mashed potatoes, I like to serve the salad at room temperature. You won't believe something so easy is so good. Ingredients:
4 -6 cups mashed potatoes |
3 -4 chopped hard-boiled eggs |
1/4-1/2 cup sweet relish |
1/2-1 cup cubbed cheddar cheese |
1/4-1/2 cup miracle whip |
1/2 teaspoon mustard (any kind) |
salt and pepper |
Directions:
1. Combine all ingredients and stir. |
