Yes! Yes! This IS truly a dessert pie, believe it or not. Passed on to me by my dear friend, Phyllis from the Hatboro YMCA. You won't be disappointed. Ingredients:
1 9 pie crust, baked lightly |
1 cup milk |
1/2 cup sugar |
juice and zest of 1 lemon |
1 1/2 cups leftover mashed potatoes |
2 egg yolks |
2 tablespoons butter, melted |
pinch of salt |
2 egg whites, beaten to firm peak stage |
nutmeg |
Directions:
1. Preheat oven to 475 degrees F. 2. Mix together the milk, sugar, lemon zest and lemon juice. 3. Add mashed potatoes and egg yolks. 4. Mix well. 5. Add butter and salt. 6. Mix well. 7. Fold in egg whites. 8. Pour into prepared crust. 9. Sprinkle with nutmeg. 10. Bake for 10 minutes. 11. Reduce oven temperature to 350 degrees F. 12. Bake 20 minutes longer. |
