This is a great way to use up leftover potatoes, especially if there are no gravy leftovers. Every time I eat them, I get warm fuzzy memories. Ingredients:
6 c leftover potatoes, mashed with milk and butter |
3 large eggs, beaten |
4 green onions, sliced |
1 clove garlic, minced |
3/4 c flour, + more for coating |
salt & pepper to taste |
Directions:
1. Mix all ingred. together to form soft 3 inch x 1/2 inch patties (add flour if needed) 2. Dredge patties in flour 3. Fry in butter or shallow oil til browned on both sides and cooked thru 4. Serve as is or with sour cream and/or apple sauce. |
