Great way to revive leftover mashed potatoes. I make this the next morning as a brunch side, instead of the usual hashbrowns. I pray for leftover potatoes after a holiday dinner or weekend dinner to make this side! Read more ! Ingredients:
2 cups or more leftover mashed potatoes, cold |
1/2 cup of flour |
oil for frying |
Directions:
1. Start heating the frying pan with 1/4 inch of oil. 2. Take a heaping spoonful of cold mashed potatoes shape into a patty. 3. Dip patty into flour, making sure that the patty is entirely dusted with the flour. 4. Fry. Carefully, flip the potato pancakes (I use 2 spantulas) over to fry both sides until golden brown. 1 - 2 minutes (Be Gentle it all depends on the consistcy of your mashed potatoes). Set aside on paper towel to drain oil. 5. Serve by itself or with a condiment of your choice; I like ketchup. |
