A delicious twist on your old standby. An impressive dish to use for entertaining guests. Ingredients:
6 medium cooked potatoes, coarsely mashed or riced |
2 c cheddar cheese, shredded |
1/4 c butter |
1 1/2 c sour cream |
s and p |
2 tbsp butter and paprika for topping |
Directions:
1. Add cooked potatoes to a large bowl. 2. In a medium saucepan over low heat, add cheese and butter stirring until melted. 3. Remove from heat and stir in sour cream, s and p. 4. Fold mixture into potatoes and pour into 2 quart casserole. 5. Dot with remaining butter and sprinkle with paprika. 6. Bake at 350 degrees for 30 minutes. |
