This is one of my favorite ways to jazz up mashed potatoes. You could use instant, refrigerated or leftover potatoes for this dish. To make it pretty for Christmas, dice up red and green bell peppers in place of the pimento. Read more . And adding crispy bacon is also a good idea, if you like it. Enjoy!
Ingredients:
3 cups mashed potatoes
1/2 teaspoon salt
1/4 teaspoon pepper
2 large eggs, lightly beaten
1 (3-ounce) package cream cheese, softened
1 small onion, chopped
1 (2-ounce) jar diced pimiento, undrained
1 cup (4 ounces) shredded sharp cheddar cheese
Directions:
1. Preheat oven to 350 degrees.
2. Place mashed potatoes in a mixing bowl and add 1/2 teaspoon salt and 1/4 teaspoon pepper. Stir in eggs, cream cheese, onion, and pimiento. Place in a lightly greased 11- x 7-inch pan.
3. Bake, covered, for 30 minutes. Uncover and sprinkle with cheese. Bake 10 more minutes.
