Works great using left-over mashed potatoes. Definately a favorite of ours from Paula Deens cookbook Ingredients:
2 cups mashed potatoes |
1/2 cup sour cream |
salt, pepper and garlic powder |
1 small onion, sliced thin |
1 small bell pepper, sliced thin ( i like the red ones) |
8 tbsp butter ( 1 stick ) |
4 medium whole potatoes,cooked |
1 1/2 cups grated sharp cheddar |
6 slices bacon, cooked crisp |
Directions:
1. Preheat oven to 350 degrees. 2. Spread mashed potatoes evenly in bottom of casserole dish. 3. Layer sour cream evenly on top. EACH TIME you add a layer sprinkle with seasoning. 4. Saute onion and pepper in butter; evenly layer on top of sour cream. 5. Next, layer with 1/2 cup cheddar. 6. Slice potatoes and layer over cheese until top is completely covered with potatoes. 7. Finally, top with remaining 1 cup cheese and bake for about 30 minutes, or til hot. Remove from oven and crumble bacon over top. |
