I got this recipe from whole foods market. Ingredients:
4 -6 red potatoes, cut into quarters |
2 tablespoons margarine |
2 tablespoons olive oil, divided |
4 tablespoons milk |
1 small onion, finely chopped |
2 stalks celery, chopped |
paprika (to garnish) |
Directions:
1. Cook the potatoes in boiling salted water until tender, about 15 minutes. 2. Preheat oven to 450°F. 3. Heat 1 tablespoon of olive oil over medium heat in a skillet. 4. Sauté the onions, celery until soft. 5. Set aside. 6. When the potatoes are done, drain them well and return to the cooking pot. 7. Add the butter and the milk. Mash together well. 8. Add the sautéed vegetables. 9. Spread the remaining tablespoon of olive oil in an 8x8 or 9x9 casserole dish. 10. Spoon mashed potatoes into the dish and sprinkle with paprika. 11. Bake for 20 minutes or until golden brown. |
